Here’s a quick and easy way to make delicious shrimp any day of the week. It starts with a 1 hour marinade, followed by a short grilling session, and then the shrimp are finished off with a garlic herb butter. This recipe packs a ton of flavor into these bite-sized sea critters!

  • 1 pound shrimp, peeled and deveined

Marinade

  • 1/3 cup olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons parsley, chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon fresh basil, chopped
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Garlic Herb Butter

  • 1/4 cup salted butter, melted
  • 1 garlic clove, minced
  • 1 teaspoon parsley, chopped

Steps

  1. Make the marinade

    Combine all of the marinade ingredients in a medium-sized bowl. Place the shrimp into a large ziplock bag and pour in the marinade mixture. Marinade the shrimp for 1 hour. 

  2. Make the herb butter

    Combine the butter, garlic, and parsley, and set aside until the shrimp have finished cooking.

  3. Preheat the grill

    Preheat the grill to 375°F. I recommend grilling the shrimp over direct heat.

  4. Grill the shrimp

    Slide the shrimp onto skewers to allow for easier adding and removing from the grill. Grill for 3 minutes per side or until the shrimp is just opaque. I like to cook shrimp to an internal temperature of 135–140°F (57–60°C), but the FDA recommends 145°F (62°C).

  5. Mix grilled shrimp in garlic herb butter

    Remove from the skewers and place in a large bowl. Be careful, the shrimp will be hot. Pour the garlic herb butter over the shrimp and toss gently to coat.

  6. Enjoy the grilled shrimp

    Serve with lemon wedges and enjoy!
